Marinated Cucumber, Tomato & Onion Salad

Ingredients:

  • 2 cucumbers, peeled and thinly sliced
  • 4 ripe tomatoes, cut into wedges
  • 1 onion, thinly sliced into rings
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup vegetable oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. In a small bowl, whisk together the water, vinegar, oil, sugar, salt, and black pepper to make the marinade.
  2. In a large bowl, combine the cucumbers, tomatoes, and onion.
  3. Pour the marinade over the vegetables and toss gently to coat everything evenly.
  4. Cover and refrigerate for at least 2 hours to let the flavors meld.
  5. Serve chilled for a crisp, refreshing salad.

Storage Tip:
Keep any leftovers in an airtight container in the refrigerator for up to 3–5 days.

Customization Ideas:
Try swapping in red wine vinegar, apple cider vinegar, or a different type of onion (like red or sweet) to give the salad a unique twist that suits your taste.
