Marinated Cucumber, Onion & Tomato Salad
A crisp, tangy, and refreshing salad that’s ideal for summer. This easy side dish pairs beautifully with grilled meats or can be enjoyed on its own.
Ingredients
- 3 medium cucumbers, peeled and sliced ¼-inch thick
- 1 medium onion, sliced into thin rings
- 3 medium tomatoes, cut into wedges
- ½ cup vinegar
- ¼ cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon black pepper
- ¼ cup oil (vegetable or olive oil)
- 1 teaspoon chopped fresh mint (optional)
Instructions
- Prepare the Vegetables:
In a large mixing bowl, combine the sliced cucumbers, onion rings, and tomato wedges. - Make the Marinade:
In a separate bowl or measuring cup, whisk together the vinegar, sugar, water, salt, pepper, and oil. Stir in fresh mint, if using. - Combine & Chill:
Pour the marinade over the vegetables. Toss gently to coat everything evenly. Cover the bowl and refrigerate for at least 2 hours to let the flavors meld. - Serve Cold:
