Marinated Cucumber, Onion & Tomato Salad
A crisp, tangy, and refreshing salad that’s ideal for summer. This easy side dish pairs beautifully with grilled meats or can be enjoyed on its own.

Ingredients

  • 3 medium cucumbers, peeled and sliced ¼-inch thick
  • 1 medium onion, sliced into thin rings
  • 3 medium tomatoes, cut into wedges
  • ½ cup vinegar
  • ¼ cup sugar
  • 1 cup water
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ¼ cup oil (vegetable or olive oil)
  • 1 teaspoon chopped fresh mint (optional)

Instructions

  1. Prepare the Vegetables:
    In a large mixing bowl, combine the sliced cucumbers, onion rings, and tomato wedges.
  2. Make the Marinade:
    In a separate bowl or measuring cup, whisk together the vinegar, sugar, water, salt, pepper, and oil. Stir in fresh mint, if using.
  3. Combine & Chill:
    Pour the marinade over the vegetables. Toss gently to coat everything evenly. Cover the bowl and refrigerate for at least 2 hours to let the flavors meld.
  4. Serve Cold:
    Stir before serving and enjoy chilled for a cool, zesty bite.
